My favorite way to make mashed potatoes that takes no time at all, and most importantly…does not involve having to peel the potatoes! (The worst job ever) Mashed potatoes are a great side dish to any protein, and are very cost efficient if you have a lot of mouths to feed. This recipe is simple and delicious, and uses ingredients that I bet you already have in your pantry It's the best of both worlds!

Ingredients (4-6 Servings):
8-10 Yukon gold potatoes, washed
1/4-1/2 C milk
3 Tbsp butter
1 Tbsp + 1/2 tsp salt
1/2 tsp pepper
1/2 tsp seasoned salt
1/3 C chopped fresh parsley

Directions:
Bring 8 C of water to a boil in a large stock pot. Add 1 Tbsp salt to the water. Roughly chop the potatoes into 2” cubes. Carefully place the potatoes into the boiling water and cook on med/high heat for 12 minutes or until fork tender. Using a colander, drain the water from the potatoes and return them to the pot. Add 3 Tbsp butter and 1/4 C milk and mash with a potato masher until they reach your desired consistency. If the potatoes look too dry, add and additional 1 Tbsp of milk at a time until they reach your desired texture. I usually end up using close to 1/2 a cup total. Season with the remaining 1/2 tsp salt, pepper and seasoned salt. Taste and add more if needed. Stir in fresh parsley and serve!
