Annie’s Granola


Okay, I know I say that all of my recipes are great (because they are), but THIS one might be the G.O.A.T. Most of the recipes I keep in my house are named after people, places or experiences in my life - because I love when recipes have good stories behind them. I got this recipe from one of my best friends, Annie, when she told me about her mom's famous homemade granola recipe. I NEEDED IT. Safe to say, this recipe is quite literally one of my prized possessions, and when they gave me the green light to share it with you I was SO EXCITED! You guys are going to love it so much, but also probably hate it because if you're anything like me, you will not be able to stop eating it until it's gone. Use this granola on top of yogurt, pancakes, smoothie bowls, in a bowl with milk, or even just by itself as a snack. It is simple to make, ready in under 30 minutes and will fill your home with the most incredible smell while it bakes - just wait! My other favorite way to use this recipe is during the Holidays. I will package the granola up into little mason jars and give them as gifts - people LOVE it! Can't wait to see you all make this special recipe, you'll never buy granola from the store ever again!

Ingredients:

¼ C coconut oil

⅓ C brown sugar

⅓ C honey (sub agave or maple syrup for vegan version)

4 C old fashioned oats

½ C unsweetened coconut

½ C slivered almonds

½ tsp salt

½ tsp cinnamon

Additional Supplies:

Baking sheet

Parchment paper or silicone baking mat

Directions:

  • Preheat the oven to 325 deg (F) and line a baking sheet with parchment paper or a silicon baking mat.

  • In a microwave safe bowl, combine coconut oil, brown sugar and honey. Microwave for 30-40 seconds until the coconut oil is melted. Stir.

  • NOTE: The oil and sugar will remain separated - this is normal.

  • In a large bowl, combine remaining ingredients and stir until combined. Pour coconut oil mixture over the oats mixture and stir until evenly coated.

  • Spread mixture onto a lined baking sheet in one even layer. Bake for 15 minutes.

  • After 15 minutes, stir the oats, then reassemble them into 1 even layer, and bake for an additional 6-8 minutes.

  • Remove from the oven and let sit for 15 minutes WITHOUT TOUCHING. This is important!

  • After 15 minutes, break the granola apart with a spatula and serve!

Prep Time: 5 minutes

Cook Time: 22 minutes

Total Time: 27 minutes
