Ingredients (4 servings):
Lettuce cups, I like Bibb lettuce best
2 Tbsp cooking oil (olive or avocado)
1/2 a large yellow onion, diced
1 lb ground Turkey or chicken
1 tsp fresh ginger, minced or grated
3-4cloves garlic, minced
8oz can water chestnuts, drained & roughly chopped
1 pint white mushrooms, finely chopped
1 C shredded cabbage
1 C chopped snap peas
1/2 C low sodium soy sauce
1 Tbsp rice vinegar
1/2 tsp sesame oil
Optional for sauce: 1 Tbsp Sambal chili sauce or sriracha
Optional toppings: shredded carrots, sliced green onion, sesame seeds

Directions:
Heat a large skillet over med/high heat. Add cooking oil. Add onion and ground Turkey. Cook until turkey is no longer pink. Add snap ginger and garlic. Cook 1-2 min. Add snap peas, mushrooms, cabbage and water chestnuts. Stir and cook 2-3 min. In a separate bowl, whisk together soy sauce, rice vinegar, sesame oil and Sambal chili sauce (if using). Add sauce and cook additional 2-3 min. Spoon meat mixture into lettuce cups, add desired toppings and serve!
