Basil Pesto - truly one of my favorite sauces to cook with! You will see me use this homemade pesto recipe in an array of dishes because it is SO versatile. Use it as a topping for eggs and omelets, as a spread on your favorite sandwich, a marinade for chicken or simply tossed with your favorite pasta noodles. It is absolutely delightful and I can't wait to see all of the ways you will use this recipe too!
Ingredients:
2 C fresh basil leaves
¾ C toasted pine nuts
1 lemon, juiced
3 cloves garlic
½ C olive oil (more as needed for consistency)
Salt & pepper to taste
Additional Supplies:
Blender/food processor
Directions:
In a pan, toast the pine nuts on med/high heat for 5-6 minutes until golden brown.
Add all ingredients into a blender and blend until smooth. Add more olive oil to thin out the pesto if needed.
Prep Time: 5 minutes
Cook Time: 2 minutes
Total Time: 7 minutes
Servings: Yields 1 ½ - 2 Cups of pesto (depending on how much olive oil is used)
