Ingredients:
Large handful of spinach
1 spoonful black beans, rinsed and drained
¼ C canned corn, drained
½ C shredded chicken
¼ C Carolina Gold BBQ Sauce + more to drizzle on top of the salad
¼ red onion, sliced thinly
Sprinkle of cheese
1/2 avocado, sliced
Optional:
Cherry tomatoes, halved
Directions:
1. In a small bowl, add shredded chicken and BBQ sauce. Stir until evenly combined.
2. Assemble your salad. Place spinach in the bottom of the bowl. Top with corn, beans, red onion, cheese, avocado and chicken mixture. (Option to add halved cherry tomatoes.) Top with additional BBQ sauce if needed and serve!
