Ingredients:
1 tbsp olive oil
1/2 tsp + 1/4 tsp salt, separated
1/4 tsp pepper + a sprinkle for the eggs
1 tortilla
2 eggs, scrambled
Small handful of fresh spinach
½ of a sweet potato, small dice
¼ C salsa
Sprinkle of cheese
1/2 avocado, sliced
Optional:
Spices for the potatoes: 1/2 tsp chili powder, 1/2 tsp paprika, 1/2 tsp garlic powder & 1/2 tsp cumin

Directions:
In a medium skillet, heat 1 tbsp of olive oil over medium/high heat. Add diced sweet potato. Season with ½ tsp salt and a sprinkle of pepper. (Option to add ¼ tsp chili powder, ¼ tsp garlic powder, ¼ tsp paprika and/or ¼ tsp cumin). Cook for 4-5 minutes, stirring often until the potatoes are fork tender and slightly crispy. Remove from skillet and set aside.
Return the skillet to the stove over low heat. Whisk 2 eggs in a small bowl. Add a small handful of fresh spinach to the skillet as well as the whisked eggs. Add 1/4 tsp of salt and a sprinkle of pepper. Stir constantly until the eggs are cooked through and the spinach is wilted.
Heat your tortilla for 30 seconds in the microwave. Start to assemble your burrito! Place your egg/spinach mixture and potatoes on top of the tortilla. Top with salsa, sliced avocado and a sprinkle of cheese. (option to add sliced pickled jalapenos here). Roll your burrito tightly, cut in half and serve!
