This might be one of my favorite recipes EVER and I am so excited to share it with all of you. It is salty, sweet, crispy and absolutely perfect. It can be eaten on its own, alongside pancakes and eggs, as part of a bloody mary bar, or even crumbled on top of ice cream - YEAH, I SAID IT. It is so versatile, so simple, and once you try it, it will become a staple in your home in no time. I promise!
This recipe comes from one of my favorite families in the entire world, more specifically, my best friend, Charlotte and her mother, Tara. I first tried it when I spent the weekend with Charlotte and her family during our freshman year at UCLA. It is also important to mention that Tara is an incredible cook. And I mean, incredible. She is the ultimate #momgoals and this is not the last Tara-inspired recipe you will find on my blog. Anywayssss, I'm getting distracted! Charlotte also played water polo with me at UCLA, and when we would have games in Northern California, Tara would sometimes make "candy bacon" as I called it, for our team as a post-game treat. And let me tell you, it was the BEST. I would literally hang around her like a vulture and scoop up all of the extra bags because I loved it so much. I also may or may not have eaten every bite of it before we even got to the airport to fly home. You'll understand when you make it. Trust me.
Ingredients:
8-10 slices of thick cut bacon
1 - 1½ C brown sugar
Additional Supplies:
Parchment Paper
Directions:
1. Preheat oven to 425 degrees (F).
2. Line a baking sheet with parchment paper, and lay bacon flat on the sheet so that none of them are touching. (You may need to cook these in several batches to ensure you do not crowd the pan.)
3. Generously sprinkle brown sugar over each slice of bacon (about 2 tbsp for each slice - it will look like A LOT but just go with it!).
4. Bake for 8-10 minutes. Carefully remove from the oven, and drain the fat off of the tray. Try to get as much of the fat off as you can, but don't worry if there is some left over.
TIP: I pour the bacon grease into an old jar and set it aside until it has cooled. That way you are not pouring hot grease down your sink - that's a big no no!!
TIP: Use a spatula to press down on the bacon as you drain the grease to prevent the bacon slices from sliding off of the tray.
5. Using tongs, rearrange the bacon so that they are not touching again, and bake for an additional 5-7 minutes until the bacon is at your desired crispness. Keep in mind that the bacon will continue to crisp up as it cools.
6. Remove from oven and transfer bacon to a fresh piece of parchment paper, lying flat to cool for at least 5 minutes. Serve.
NOTE: Each time you put the bacon in the oven, you must keep a close eye on it. Brown sugar can go from caramelized, sweet goodness to a burnt mess in an instant!
