This burrito bowl recipe is one of my favorite meals to make when I have a mishmash of ingredients in my pantry. The beauty of these burrito bowls is that you can completely make it your own based on what you have on hand or what your preferences are! It is fresh, flavorful and completely catered to YOU. This recipe is also great for a crowd! You can make a big batch of both the meat mixture and the cauliflower rice, then set up a "make your own bowl" bar with all of the toppings. This allows guests to add what they like and omit what they dislike - everybody wins!
Ingredients:
1lb ground beef (ground turkey or ground chicken also OK)
1 medium yellow onion, diced
2 cloves garlic, minced finely
4 C cauliflower rice
1 tbsp tomato paste
2 tbsp olive oil, separated
¼ C homemade taco seasoning or 1 packet of store bought taco seasoning
1 large zucchini, diced
2 bell peppers, diced
3 handfuls of kale
1 (15oz) can sweet corn kernels, drained
1 (15 oz) can black beans, drained
Optional:
Avocado crema
cheddar cheese, grated (for topping)
pickled jalapenos
greek yogurt or sour cream
salsa
sliced olives
Directions:
1. Heat 1 tbsp of olive oil in a large skillet over med-high heat. Add ½ of the diced onion and saute for 2-3 minutes. Add garlic and cook for 1-2 minutes until the onions are softened and the garlic is fragrant.
2. Add ground beef to the skillet. Break up with the stirring spoon so there are no large clumps of meat. Sprinkle in ½ of the taco seasoning. Continue stirring until the meat is fully browned, about 5-6 minutes.
3. When the meat is almost cooked through, stir in the tomato paste until the meat is evenly coated. Cook for an additional 2 minutes, then remove the meat from the pan and set aside.
4. In the same skillet, add the remaining 1 tbsp of olive oil. Add the cauliflower rice and remaining taco seasoning. Stir until fully combined. Saute for 2-3 minutes until the cauliflower is heated through. Remove from skillet and set aside.
5. In the same skillet, add the remaining onions (you can also save these to top the bowls with raw onion), zucchini, kale, bell peppers and any other veggie you want to use. Saute on high heat until the veggies start to brown, about 3-4 minutes. Season with salt and pepper to taste. You can add more olive oil to the skillet if needed!
6. Assemble your bowls! First make a bed of cauliflower rice, top with meat, veggies, black beans & corn (straight from the can) and any other topping your heart desires!
