Who doesn't love fried rice?! I used to be OBSESSED with the fried rice from Panda Express as a kid, and absolutely nothing could compare. At this point in my life, I couldn't even tell you the last time I went to Panda Express (SAD), but the good news is that I have learned to make my own healthified version of fried rice. YAY! This cauliflower fried rice is overflowing with flavor, and it starts with the Pederson's Farms Uncured Kielbasa Sausage. This kielbasa gives the cauliflower fried rice a salty, crispy, delicious flavor that sets it apart from all other recipes. And guess what? This dish is completely Whole30 compliant! It's easy, it's healthy and it tastes great - why aren't you cooking yet?!
Ingredients:
1 (14oz) package Pederson’s Farms Uncured Kielbasa, diced
1 medium shallot, diced
3 cloves garlic, minced
3 medium or large carrots, peeled and sliced into thin rounds
1 tbsp olive oil
1 lb cauliflower rice
3 medium or large carrots, peeled and sliced into thin rounds
4-5 green onions, chopped
½ C frozen peas
½ C coconut aminos
1 tsp fresh ginger, minced
1 tsp sesame oil
2 tsp fish sauce
2 tsp Sambal Chili Paste (add less/more depending on desired spice level)
2 eggs, whisked
1 tbsp sesame seeds (optional for garnish)
1 avocado, sliced (optional for garnish)
Directions:
Heat a large skillet on med/high heat. Add diced kielbasa to the pan and saute for 5-6 minutes until golden brown and crispy. Remove the kielbasa from the skillet and set aside.
Reduce heat to medium. Add shallots and garlic to the skillet. Stir and saute for 1 min. Add the carrots, cauliflower rice and olive oil. Stir and cook for an additional 4-5 min.
In a small bowl, combine coconut aminos, ginger, sesame oil, fish sauce and chili paste. Whisk to combine.
Add the cooked sausage back to the skillet as well as the frozen peas. Stir and cook for 2 minutes.
Add sauce to the skillet. Stir to combine and let simmer for 2 min.
Using your stirring spoon, create a well in the middle of your cauliflower rice by pushing the veggies to the outside edges of the skillet. There should be a circle of exposed skillet in the center of the pan. Pour whisked eggs to the center of the skillet.
Cook the eggs, stirring periodically WITHOUT combining with the rest of the vegetables in the pan. About 1-2 min. Once the egg is almost fully cooked, start to slowly stir in the vegetables around the perimeter of the egg. This will help the egg cook faster. Once the egg is fully scrambled, stir with the cauliflower rice until evenly combined.
Remove from heat. Stir in ½ of the chopped green onions. Taste and add salt & pepper as needed. Serve topped with the remaining green onions, sesame seeds and sliced avocado!
