Cauliflower Gnocchi


Ingredients:

½ bag of frozen cauliflower gnocchi

½ C tomato basil marinara sauce

½ bag of frozen veggie medley

3 tbsp water

1 tbsp olive oil

Directions:

  • Heat a medium skillet over medium heat. Add cauliflower gnocchi and water, cover and let cook for 6-8 minutes.

  • While the gnocchi cooks, place frozen veggies into a microwave safe bowl and heat for 3 minutes. Carefully drain out liquid from the veggies after microwaving and set aside.

  • Once the gnocchi is thawed (after 6-8 minutes), add olive oil and thawed veggies to the skillet. Let the gnocchi and veggies saute until they get a little browned and crisp along the edges (3-4 min).

  • Remove from heat and stir in the marinara sauce. Serve!
