Chicken Noodle freaking soup. This is one of those recipes where the first bite transports me straight back home and just warms my heart. My mom would make this chicken noodle soup recipe every once in a while, and I legitimately would eat it for every meal until it was gone. When we were growing up, my big sister and I would have water polo practice until late at night year round - yeah, yeah I know California winters don't really count, but practicing at night in an outdoor pool?! I mean, come on. Whenever my Mom picked us up from practice and told us she made her chicken noodle soup, it immediately turned into the best day ever! Going straight from being in a freezing pool to slurping up hot homemade soup was the perfect ending to the day. It is homey, hearty and fits every expectation you might have for chicken noodle soup. I promise you're going to love it!!
Ingredients:
6-8 C homemade bone broth or store bought low sodium chicken broth
2 cooked chicken breasts, shredded (time saver - use a rotisserie chicken!)
1 yellow onion, diced
3 large carrots, peeled & diced
3 stalks celery, diced
½ C frozen peas
1 package frozen egg noodles
Salt & Pepper to taste
Optional:
1 C original unflavored nut pods creamer
Handful of fresh parsley to garnish
Directions:
1. Heat 6-8 C of bone broth in a large stock pot on medium heat. (Click HERE for my homemade bone broth recipe)
2. Add onion, carrots and celery. Cover and let simmer for 20 minutes.
3. If using raw chicken breasts, cover a baking sheet with aluminum foil, season the chicken with a pinch of salt and pepper on both sides, and bake for 15 minutes. After 15 minutes, flip the breasts and cook for an additional 6-8 minutes until the juices run clear. Remove from oven, set aside and let rest.
4. Once the chicken cools (or if you are using a rotisserie chicken) shred the breasts with two forks and add to the stock pot. Add frozen peas and frozen egg noodles and let simmer for 10-15 minutes or until the noodles reach desired consistency.
5. Option to add 1 C nut pods creamer if you would like a creamier soup. Remove from heat and serve immediately.
