Anybody who has completed a Whole 30 knows the struggle once you get to day 17 or 18, when absolutely nothing sounds appetizing and all you want is to shove 10 bagels into your face. Ya feel me? Well, this chicken salad recipe is one of my go-to meals whenever I do a Whole 30, and it always hits the spot! It's creamy, crunchy, slightly sweet from the grapes, and makes a delightful lunch or snack. My favorite way to eat it is in lettuce wraps, or if I'm not on Whole 30, I love scooping it up with some crackers. YUM!
Ingredients
2 C shredded/diced cooked chicken (I prefer chicken breasts for this recipe!)
½ C white onion, chopped
½ C celery, chopped
¾ C red grapes, halved
⅓ C avocado mayo (I use Primal Kitchens Whole30 approved)
½ tsp salt
½ tsp garlic powder
½ tsp onion powder
¼ tsp ground pepper
1 tbsp apple cider vinegar
Directions
Combine all ingredients in a large bowl and serve!
