Chocolate Covered Strawberries


Chocolate covered strawberries. Let me start with the fact that these delightful little treats are NOT just for Valentine's Day! When I think of strawberries, I think of summertime. I grew up in Santa Barbara, which is really close to a lot local strawberry fields, and we got THE BEST strawberries from them either from roadside vendors or at the farmer's market. There was one guy, we called him the strawberry man, who would set up a little tent out of the back of his truck right next to my high school. As the weather got warmer and school was almost out for the summer, he would set up shop and we would literally stop and buy strawberries from him almost every day. They were the sweetest, most juicy and perfect strawberries of all time! So what could make them even better? Covering them in chocolate of course! These little treats could not be easier to make, and for some reason, whenever I make them I get such high praise! It's a sneaky little trick if you ask me. They're pretty, delicious, and make a great gift when packaged up in a cute little bag or box. If you need a quick, shareable, and cost effective dessert - these are for you!

Ingredients:

2 lbs fresh strawberries, washed and dried

2 C dark chocolate chips

4 tbsp coconut oil

⅔ C white chocolate chips

Additional Supplies:

Parchment paper

Wire cooling rack (optional)

Narrow tip squeeze bottle, piping bag or small Ziploc bag

Directions:

  • Line a baking sheet with parchment paper.

  • NOTE: If you have a wire cooling rack, place on top of the parchment paper so that the excess chocolate will drip off of the strawberries, and land beneath it on the pan.

  • In a small sauce pan, melt 3 tbsp of coconut oil and dark chocolate chips over low heat. Stir constantly until all chocolate chips have melted. Once melted, remove from heat.

  • Make sure strawberries are fully dry. One at a time, hold the strawberry by the stem/leaves, and dip into the dark chocolate. Place each strawberry on the parchment paper.

  • Once all of the strawberries have been dipped into the dark chocolate and placed onto the parchment paper covered baking sheet, place the baking sheet into the refrigerator for 15 minutes.

  • In another small sauce pan, heat the remaining 1 tbsp of coconut oil with the white chocolate chips on low heat. Stir constantly until the chocolate is fully melted.

  • Transfer the melted white chocolate into the squeeze bottle, piping bag or Ziploc bag.

  • NOTE: if using a Ziploc bag, cut a small hole in the corner of the bag so that only a small about of chocolate can be squeezed out at one time.

  • Remove the strawberries from the refrigerator. In a horizontal back and forth motion, drizzle the white chocolate over each strawberry, working from the leaves to the tip of the strawberry.

  • Once all strawberries have been drizzled with white chocolate, place back in the refrigerator until ready to serve!

Cook Time: 30 minutes

Total Time: 35 minutes
