Whole30 tacos?! Count me in! Don't get me wrong, you can ABSOLUTELY serve these with regular tortillas and they will still be fab. But, the lettuce wrap version is just as good! My favorite Whole30 compliant chorizo comes from Pederson's Farms. They make the BEST Whole30 compliant pork products with all clean ingredients and they do not skimp on flavor! My secret is to add cauliflower rice to the meat mixture to 1. Help stretch the ingredients and make more food, and 2. to sneak more veggies into the tacos! The cauliflower rice will taste just like the chorizo, and the taco filling mixture will more than double after adding it - amazing! These tacos are salty and spicy from the chorizo, sweet from the onions and completely customizable with your choice of toppings. You're going to LOVE these!
Ingredients:
2 tbsp olive oil
1 (16oz) package of Pederson’s Farms No Sugar Added Chorizo
1 white onion, diced
3 C cauliflower rice
1 tbsp tomato paste
¼ C water
½ tsp salt (more to taste)
1 head of butter lettuce (or another form of lettuce cups)
Optional Toppings:
Fresh lime wedges
Raw white onion, diced
Fresh cilantro
Hot sauce
Salsa
Pickled jalapeños
Directions:
Heat olive oil in a large skillet on medium/high heat. Once the oil is hot, add diced onion and saute for 3-4 min until starting to soften.
Add the Pederson's Farms chorizo to the skillet. Break up with the back of your stirring spoon so there are no large chunks. Cook for 6-8 minutes until fully cooked through.
Add cauliflower rice to the skillet. Stir until fully combined. Add tomato paste, water and salt. Stir to combine and cook for an additional 3-4 minutes.
To serve, scoop the chorizo mixture into a lettuce cup and finish with your choice of toppings!
