There is truly nothing better than a hot, hearty soup - especially when you are doing a Whole30! This Potato & Kielbasa soup is absolutely delicious and is the perfect cozy meal that warms you up from the inside out. The star in this dish is the salty, smoky and slightly crispy KIELBASA! My favorite Whole30 compliant brand to use is Pederson's Farm No Sugar Uncured Old World Kielbasa. It is made with all clean ingredients, but the best part is the FLAVOR! Ingredients:
3 lb russet potato, cut into ½ inch cubes
3 tbsp olive oil, separated
4 leeks, thinly sliced
1 yellow onion, diced
4-5 cloves garlic, minced
3 large carrots, peeled & diced
1 (14oz) Pederson’s Farms Uncured No Sugar Old World Kielbasa, diced
4 tbsp arrowroot powder (sub 2 tbsp all-purpose flour for non Whole30)
4 C vegetable broth
1 (14 oz) can coconut milk
2 tsp salt, more to taste
1 tsp ground pepper, more to taste
Green onion, sliced
Additional Supplies:
Large stock pot
Blender
Directions:
Heat a stock pot on high heat.
Slice kielbasa into ½ inch thick coins, then cut each circle into 4ths, creating 4 small triangular pieces from each circle.
Add 1 tbsp of olive oil to the pot. Once hot, add the diced kielbasa. Cook for 4-5 min, stirring consistently until it is crispy and browned. Remove from skillet and set aside.
Add remaining 2 tbsp of olive oil to the pot. Add onion, leeks and garlic. Saute for 3-4 min.
Add carrots and potatoes. Saute for 2-3 min.
Sprinkle in arrowroot powder and stir so all veggies are coated.
Stir in vegetable broth, cover and bring to a boil.
Once boiling, stir in coconut milk. Reduce heat to medium, cover and let simmer for 12 min, stirring periodically.
Remove ⅓ of the soup mixture and place into a blender. CAREFULLY blend the soup until it is thick and smooth. Pour the blended mixture back into the stock pot, and stir to combine.
Add kielbasa back into the soup, along with salt and pepper (add more to taste). Cover and let simmer for 5 minutes. Top with green onions and serve!
