Crispy Chickpeas! Your salads will never be the same again. These little chickpeas are bursting with flavor, and add the little bit of salt and crunch that every good salad needs. One of my favorite flavors on this planet is RANCH. Who's with me?! If the answer is yes, you need to make these crispy ranch chickpeas ASAP because you're going to love them. And the best part? If you're not a huge fan of ranch flavoring, you can use this recipe as a starting point, and replace the seasoning with whatever spice mixture you like. So easy, so few ingredients, and you will actually crave that salad you packed for lunch. YUM!
Ingredients:
1 can (15oz) garbanzo beans, strained and rinsed
1 tbsp avocado oil
½ tbsp AND 1 tsp dry ranch dressing and seasoning mix, separated
Directions:
Preheat the oven to 425 deg (F)
After rinsing the chickpeas, lay out flat and pat dry with paper towels.
Place dried chickpeas in a bowl and toss in avocado oil and 1 tbsp ranch seasoning.
Spread chickpeas in 1 even layer on a baking sheet lined with parchment paper and bake for 20 minutes, stirring halfway through.
Remove chickpeas from the oven and place into a bowl. Sprinkle remaining 1 tsp of ranch seasoning and salt to taste. Stir until fully combined and serve!
