Fiesta Bowl


Ingredients:

½ C cooked brown rice

Handful of fresh spinach

¼ C corn, drained

¼ C black beans, rinsed and drained

1 tbsp greek yogurt

½ C shredded chicken

¼ c salsa to stir into chicken + more to put on top if needed

⅓ bag of Frozen fire roasted veggies

2 tbsp red onion, diced

Sprinkle of cheese

½ Avocado, sliced

Optional:

½ c halved cherry tomatoes

Sliced jalapeños

Directions:

1. Heat a medium pan over medium heat. Add 1/3 of the bag of frozen fire roasted onions and peppers. Cook, stirring often for 10-12 minutes until thawed and starting to brown.

2. In a small bowl, add 1/2 C of shredded chicken and 1/4 C salsa. Stir.

3. Add all ingredients to a serving bowl or plate and serve!
