I’ve been hitting you with some major meal prep/freezer meals lately and this one might just be my favorite! You all know by now I am a breakfast gal - so anytime I can make my life easier by prepping breakfast ahead of time I’m going to do it. Making these sandwiches in bulk is so easy and give you the chance to have a hot, filling breakfast just by popping in the microwave as you run out the door. Delish.

Ingredients (6 sandwiches):
6 slices bacon
6 english muffins
6 slices cheese, I use sharp cheddar
8 eggs
1/4 C milk
1/4 Tbsp salt
1/2 tsp black pepper
1/2 tsp paprika
Nonstick spray

Directions:
Cook bacon until crispy and break each slice in half. Set aside. In a large bowl, whisk eggs, milk, salt, pepper and paprika until all of the yolks are broken up and the spices are evenly combined. Pour into a well greased 9x13 baking dish and bake at 350 for 15-20 min until the eggs are fully set. Remove from oven and let cool completely. Cut eggs into squares (small enough to fit on the english muffin) or use the round opening of a glass to punch eggs out in circular shapes. Build sandwiches! On one half of the english muffin add your egg, topped with bacon and a slice of cheese. Top with the other half of the english muffin and wrap tightly in aluminum foil. Serve immediately, or store in the fridge. If freezing, store foil wrapped sandwiches in a freezer safe ziploc bag. When reheating, remove sandwich from foil, wrap in a damp paper towel and microwave for 1-2 min until heated throughout.
