Ingredients:
2 lbs baby gold potatoes, quartered
¼ C butter
1 package of garlic & herb Boursin Soft Cheese
½ C Original Unflavored NutPods creamer
2 tbsp salt and ½ tsp salt, separated
¼ tsp ground pepper
Additional Supplies:
Large stock pot, potato masher
Directions:
Fill a large stock pot ¾ full with water. Add 2 Tbsp salt to the water, cover and bring to a boil.
Once the water is boiling, carefully add the quartered potatoes. Cook uncovered for 10 minutes until the potatoes are fork tender. Drain water and return potatoes to stock pot.
Add butter to potatoes, and using a potato masher, start to mash the potatoes in the pot. Once the butter is melted, add the Boursin Cheese. Continue to mash until they reach the desired consistency.
Stir in the NutPods creamer, salt and pepper. Keep warm until ready to serve!
