Homemade Biscuits


I got this family recipe from a good friend of mine and HOLY MOLY it's the only biscuit recipe I'll use for the rest of my life. I usually steer clear of bread making because it feels like there are a zillion steps, and even just reading the recipes stresses me out. That is what makes this recipe so amazing. It took me 35 minutes to make these, start to finish. INSANITY! And not to mention they are freaking delicious. Please do yourself a favor and make these as soon as you possibly can. And, make a double batch and freeze one batch to make on a later date. The best. Full recipe below!


Ingredients:

2.5 C flour

4 tsp baking powder

1 tsp salt

1 tbsp sugar

1 pint heavy cream

1/4 C butter, melted

Maldon sea salt for serving

Directions: Preheat the oven to 400 degrees. In a large bowl mix together flour, sugar, salt and baking powder. Add cream while stirring until a sticky dough forms. Knead dough on a floured surface until the dough is no longer sticky (only 4-6 times, this shouldn't take long). Press or roll using a rolling pin into a 6"x8" rectangle, then fold in half and repeat two more times. Press dough into a rectangle that is 1" thick. Punch out circles with a round cookie cutter or rim of a glass. Place on a parchment paper lined baking sheet and place them in the freezer for 15 min. Remove biscuits from the freezer, and preheat the oven. Thaw biscuits only as long as it takes for the oven to heat. Bake for 16-20 min until golden brown on top. Immediately after removing from the oven, brush with melted butter and sprinkle sea salt on top. Serve! OPTION: After punching out the circles of dough, you can freeze them for up to 3 months. If baking from frozen, cooking time will increase to 18-20 min.

Why do the directions state preheat oven as the 1st instruction if you're not meant to do so til after assembly? Maybe I'm reading something wrong?
