Homemade Mac n' Cheese



Posting this because let's be honest...who doesn't love mac 'n cheese?! I know we are all fans of the boxed stuff (did someone say Annie's white cheddar shells?!) BUT I promise the homemade kind is just as easy and I guarantee you almost always will have the ingredients on hand to whip it up when you're in a pinch. I mean, what's not to like? Ingredients (4-6 servings):

1 lb macaroni noodles

3 C freshly grated cheddar cheese

1/4 C flour

3 tbsp butter

2-2.5C milk

1/2 tsp salt + more to taste

1/2 tsp pepper + more to taste

1 tsp garlic powder

1 tsp onion powder

1/4 C sour cream


Directions:

Follow instructions on the pasta box to cook pasta al dente. Heat a large skillet over med/high heat. Add butter. Once butter is melted and bubbly, slowly whisk in flour until you form a roux. This should be pretty thick and bubbly. Once all of the flour has been absorbed, slowly whisk in milk. Start with 2 C and you can always add more if you need to thin out the sauce. Add salt, pepper, garlic powder and onion powder. Stir in sour cream. Once the sour cream is incorporated, add cheese and stir until it has all melted. If the sauce looks too thick, whisk in more milk. Stir in the cooked pasta. Add salt and pepper to taste and serve immediately!
