Italian Chopped Salad


My favorite part about an Italian Chopped Salad is how hearty and filling it is! I hate when I order a salad and then after eating it...I’m ready for my next meal. This salad is packed with flavor and is one of my favorites to have for lunch or when we order pizza I make this salad to eat with it! You could also up the protein in this salad by adding shredded chicken - that would be delish. And don’t skimp on the homemade dressing. You’re gonna love it! Full recipe below:

Ingredients (2 servings):

For the salad:

2 hearts romaine lettuce, chopped into thin strips

8-10 slices dry salami, cut into thin strips

1/4 C canned sliced black olives, drained

1 C canned garbanzo beans, drained and rinsed

1 C freshly grated mozzarella cheese

1/4 C thinly sliced red onion

1 C cherry tomatoes, halved

For the Dressing:

2 tbsp red wine vinegar

1 tbsp olive oil

1 clove fresh garlic, grated

1/2 tbsp honey

1 tsp grainy Dijon mustard

Optional: 1/2 tbsp dried oregano

Directions:

Place all salad ingredients in a large bowl. In a small bowl, whisk together all salad dressing ingredients. Pour dressing over salad, toss until evenly combined and serve!
