We love a good weeknight pantry pasta recipe! This one is so simple to throw together, and is full of buttery, lemony, herby goodness. This would make a yummy side dish to some roasted chicken, or seared steaks, or it can be eaten as the main dish. Excited for y’all to get your hands on this recipe!

Ingredients:
3 T butter
4 cloves garlic, grated or finely minced
1/2 tsp red pepper flakes
Juice from 1/2 a lemon
1 lb cooked pasta
1/4 C chopped fresh parsley
1/4 C grated Parmesan
3-5 Tbsp reserved pasta water
1 large handful fresh arugula
Salt & pepper to taste

Directions:
Boil pasta and reserve 1/2 C of the pasta water prior to draining. Set aside. Melt butter in a large skillet over medium high heat. Add garlic and stir until combined. Add red pepper flakes and lemon juice. Cook 2-3 min. Add cooked pasta, parsley and Parmesan. Stir and cook for 2 min. Add arugula, stir and cook for 1-2 min. Serve immediately!
