This is the PERFECT cozy soup for winter time that is packed with veggies, nutritious broth and and an extra flavorful boost from the lemon juice. Not only is this a great soup to feed a family, or make and eat throughout the week but it is a great option to freeze and save for later! If you're a soup fanatic like me, do yourself a favor and make this recipe asap. It's worth it just for the way it'll make your house smell while it cooks. Divine!
Ingredients (4 servings)
4 leeks, thoroughly washed and diced1 small onion, diced 4-6 cloves garlic, minced 4 large carrots, peeled and diced 6 stalks celery, diced 1 tsp salt 1/2 tsp pepper 1 tsp onion powder 1/2 tsp dried thyme 1/2 tsp dried dill 1/2 tsp cumin 1 bay leaf 2 cans brown lentils, drained and rinsed 1 tbsp olive oil 1 lemon 1 quart low sodium vegetable broth
Directions: Heat oil on med/high heat in a medium stock pot. When the oil is hot, add leeks, onion, garlic, carrots and celery. Saute 4-5 min until softened and starting to brown. Add lentils and juice from 1/2 a lemon. Add spices. Stir and cook an additional 3-4 min. Add broth and bring to a boil. Reduce heat to med/low, cover and let simmer for 15 min. Add juice from remaining half of the lemon and add more salt to taste. Serve!
