Open-Faced Tuna Sandwich


I don’t know about you guys, but the summer heat in our tiny apartment has been kicking our butts. So when I have the option of making lunch without turning on the stove, that’s a win! This simple open face tuna sandwich with heirloom tomatoes and mixed greens is so fresh and perfect for a quick summer lunch.

Ingredient:

1 slice of Daves Killer Bread, toasted

1/2 an avocado

Small handful mixed greens

2-3 slices heirloom tomato

2 cans of Wild Planet Foods tuna, drained

4-6 small dill pickles, diced

2 T dill pickle juice

1/4 C Mayo

1/2 white onion, diced

Sea salt & pepper to taste

(Tuna recipe yields 4 servings)

Directions:

In a large bowl, mix tuna, onions, pickles, Mayo and pickle juice until fully combined. Add salt and pepper to taste. Spread mashed avocado on the surface of the toast. Top with mixed greens and the sliced heirloom tomato. Sprinkle tomatoes with sea salt then top with a large helping of the tuna mixture. Serve!
