Paleo Pancakes


Did you know that you can make pancakes with only two ingredients? Yes - TWO! You can make delicious, dairy-free, gluten-free, paleo pancakes with just bananas and eggs. I took this recipe a little further by putting my own spin on things, and came up with the most delightful, clean pancake recipe on the block. These things are delish! However, I will warn you, if you do not like bananas - this recipe isn't for you. But if you do, then hurry up and make them! They are a great pancake alternative for people with gluten or dairy intolerances, or somebody like me who is always looking for clean alternatives to my favorite foods. Give these a try and you'll be happy you did!

ngredients:

2 bananas, mashed

3 eggs

1 tsp vanilla extract

¼ tsp baking powder

¼ tsp cinnamon

1 tbsp honey

½ tsp coconut oil

Optional Toppings:

Fresh berries

Chocolate chips

Chopped nuts

Peanut butter

Nutella

Maple syrup

Directions:

  • In a medium size bowl, mash bananas and whisk together with eggs until fully combined and there are no large banana chunks left.

  • Add remaining ingredients (except coconut oil) and stir until combined.

  • Heat a skillet on medium heat. Add coconut oil and wait until the oil is melted and hot.

  • Using a ¼ C measure, fill it halfway with batter and pour it into the skillet, making pancakes 3-4 inches in diameter.

  • NOTE: Keep the pancakes small. They are very difficult to flip if you make them any larger than 4 inches in diameter!

  • Cook for 2-3 min, lift an edge of the pancake to check if it is golden brown underneath. If so, carefully shimmy your spatula underneath the pancake, and flip to the other side. Cook for an additional 2-3 minutes, and remove from skillet. Repeat until the batter is gone!

  • NOTE: These pancakes are very fragile and cannot be flipped like ordinary pancakes. My advice is to shimmy your spatula so that it is underneath half of the pancake, and then carefully lift until the other half is barely lifted from the skillet and quickly flip to the other side. This works much better than completely lifting pancake off of the skillet.

  • Serve with your choice of toppings!

Total Time: 15 minutes

Servings: Yields 8-10 small pancakes
