Pesto, Tomato & Burrata Salad


This pesto, tomato & burrata salad might be the easiest, most impressive salad you can make! I love making this salad when entertaining for several reasons.

  1. It’s absolutely beautiful. I love the contrasting colors of the tomatoes with the bright green pesto. Just lovely!

  2. It is easy as slicing up the tomatoes and throwing them on a plate. If you decide to purchase store-bought pesto, it makes it even easier! Done in 3 minutes, tops.

  3. It tastes GREAT. It’s the perfect addition to any protein or carb, and brings a pop of freshness to any meal.

  4. BURRATA. Enough said.

If you haven’t tried burrata cheese yet, you are MISSING OUT. It’s a semi-soft Italian cheese that tastes like Mozzarella but better. It’s rich and creamy and is absolutely perfect. Just wait until you slap some pesto on it and you’ll be in heaven! This salad is also one of my favorite recipes to make in the summertime when tomatoes are in season. I LOVE tomatoes and can literally eat them like candy. So the combination of summer sweet tomatoes, rich, salty and creamy cheese and freshly made pesto is just heavenly. I can’t wait to see you guys make this one - you’re going to love it!

Ingredients:

For the Salad:

5-7 Tomatoes (I use a combination of heirloom and campari tomatoes - the more colors, the better!)

2 tbsp high quality olive oil

1 tbsp Maldon sea salt (or similar sea salt)

½ tsp freshly cracked black pepper

8 oz Burrata Cheese

For the Pesto: (SUBSTITUTE ¾ C PREPARED PESTO)

1 C fresh basil leaves

½ lemon, juiced

2 cloves garlic

¼ C olive oil (more as needed for consistency)

Salt & pepper to taste

4-5 basil leaves, cut into thin ribbons

Additional Supplies:

Food Processor or Blender

Serving platter

Directions:

  1. Make your pesto. Place all ingredients into your food processor or blender. Blend for 1-2 min until smooth. You want your pesto to be thinner than a regular pesto so that you can pour it over the salad. I like to make mine the consistency of ranch dressing. Add more olive oil to thin your pesto, and add more basil to make it thicker.

  2. Slice your tomatoes into wedges, and arrange them on your serving platter. Nestle each ball of burrata in between the tomatoes, placing them evenly throughout the platter.

  3. Drizzle olive oil over the tomatoes and burrata. Sprinkle tomatoes and burrata with sea salt and freshly cracked pepper.

  4. With a spoon, drizzle pesto over the top of each burrata cheese ball, and additional pesto on top of the tomatoes if desired. Sprinkle fresh basil leaves on top and serve!
