Pork Ragu Pasta


This recipe is a fun one because it was created on a total whim! A few weeks ago, I created this pork ragu pasta recipe on a random weeknight for my roommate and I, and we decided immediately that it needed to be on the blog! I am a total sucker for a good pasta dish - maybe it’s because of my Italian roots, or maybe because pasta is just the GOAT. Either way, this dish is easy to make and is a great way to mix up your pasta game from the pain old pasta with marinara sauce. The ground pork infused with herbs and garlic and simmered in red wine makes for a BOMB sauce - you just need to trust me on this one! Top it with some freshly grated parmesan cheese and you’re going to have yourself a delicious dinner. This pork ragu pasta would also be a really fun recipe to make for a date night in or a girls night with your friends! The recipe is really easy to accommodate for small or large groups, so whatever the occasion, this pasta recipe is for you!

Ingredients:

1 box of dry pasta (any noodle shape works)

1 lb ground pork

¼ tsp salt

Sprinkle of pepper

2 tbsp butter, separated

½ yellow onion, diced

3 large carrots, peeled and diced

4 cloves garlic, finely minced

5 sprigs of fresh thyme

1 tsp dried oregano

2 tbsp tomato paste

1 large handful fresh spinach

½ cup red wine (sub ½ cup vegetable broth)

¾ cup vegetable broth

Salt and pepper to taste

Fresh grated parmesan (optional for serving)

Additional Supplies:

Large stock pot

Large skillet

Directions:

Follow instructions on the box of pasta to boil pasta until al dente.

While the pasta cooks, heat a large skillet over medium heat. Add ground pork with ¼ tsp salt and a sprinkle of pepper. Cook until no longer pink, about 6-8 minutes. Remove from skillet, but leave the drippings in the pan.

Add 1 tbsp of butter to the skillet. Once melted, add garlic, onions, carrots, oregano and thyme. Stir and cook for 3-4 min until the carrots are starting to soften.

Add tomato paste. Stir and cook for 1 min.

Add red wine, vegetable broth and pork back to the skillet. Stir, reduce heat to med/low and let simmer for 5 minutes.

Stir and let simmer for an additional 5-8 minutes. Add fresh spinach and cook until wilted. Taste, and add salt and pepper as needed.

Toss cooked and drained noodles into the sauce and serve with a sprinkle of freshly grated parmesan cheese.

Cook Time: 20 minutes

Total Time: 30 minutes
