Roasted Artichokes with Lemon Garlic Aoli

I LOVE ARTICHOKES! But, for some reason, I rarely buy them at the store...But after making this recipe last night, I think I'm going to be buying them a whole lot more because they were DELISH! These roasted artichokes are tender, flavorful, and pair perfectly with my lemon garlic aoli dipping sauce. The perfect appetizer or side for any dinner, you'll find yourself craving these all the time. While the process of preparing artichokes is a bit tedious, it's worth it in the end - trust me!

Ingredients:

For the artichokes:

4 artichokes

1 lemon, juiced

8 tbsp olive oil

4 cloves garlic, minced

2 tsp salt

1 tsp pepper

For the Dipping Sauce:

1 C mayo

1 lemon, juiced

1 clove garlic, minced

1 tbsp fresh parsley (dried works too)

⅛ tsp cayenne pepper

½ tsp salt plus more to taste

¼ tsp pepper plus more to taste

Additional Supplies:

Baking sheet

Scissors

Basting brush (optional)

Directions:

  • Preheat the oven to 400 deg (F). Line a baking sheet with parchment paper or foil.

  • Rinse and dry your artichokes. Cut off the bottom inch of the artichoke stem, then pick off some of the lower leaves near the stem. Cut off the top 2 inches of the artichoke. Then, using scissors, snip off the tips of each leaf to remove the sharp thorns.

  • Cut each artichoke in half vertically, then scoop out the center of the artichoke from each half - removing the fuzzy “choke” and some of the inner leaves.

  • Brush each cleaned artichoke with lemon juice, then place cut side up on the baking sheet. Repeat steps 2-4 for all 4 artichokes. (If you don't have a basting brush, you can just spoon the lemon juice over the artichoke.)

  • Drizzle the cut side of the artichokes with olive oil (about 1 tbsp for each artichoke half). Place minced garlic into the center cavity of each artichoke. Season with salt and pepper.

  • Flip artichokes so they are cut side down, then bake for 32-35 minutes until tender. The artichokes are done once you can easily pull leaves off of the artichoke.

  • While the artichokes bake, make the dipping sauce. Combine all ingredients in a bowl and whisk until evenly combined. Taste and add more salt and pepper if needed.

  • Remove artichokes from the oven, and serve with dipping sauce!

Total Time: 45 minutes
