Ingredients:
⅓ C cooked rice
1 scoop canned black beans, drained and rinsed
½ C shredded chicken
¼ C salsa + more if desired
2 tbsp greek yogurt
⅓ bag of Frozen fire roasted veggies
Sprinkle of cheese
½ avocado, sliced
1 tortilla
Optional:
Jalapenos
Directions:
1. Heat a medium skillet over med/high heat. Add frozen fire roasted veggies to the skillet and cook for 10-12 minutes until thawed and starting to brown.
2. If using leftover rice, place it into a microwave safe bowl with 1 tbsp of water. Microwave for 2 minutes.
3. In a small microwave safe bowl, mix shredded chicken and salsa. Heat in the microwave for 1 minute.
4. Once the veggies are cooked, assemble your burrito. Place your tortilla on a microwave safe plate and heat for 15 seconds in the microwave. Then, top with salsa chicken, rice, beans, veggies, greek yogurt, cheese and avocado. Roll the burrito tightly and serve immediately!
