There are SO many different methods to making yummy breakfast potatoes, but this one might be the easiest and most efficient in my opinion! It's all made in one skillet on the stovetop and is ready in under 15 minutes. My biggest advice when cooking potatoes is do not be afraid to season the crap out of them! 8-10 yellow potatoes, diced (you can use russet, yukon, red potatoes, really anything here!)
1 tbsp butter
1 tbsp olive oil (plus more if needed) 1/2 yellow onion, diced 1 bell pepper, diced 1 tbsp garlic powder 1 tbsp chili powder
1/2 tbsp cumin 1 tsp salt 1/2 tsp black pepper 1/2 tsp chili flakes
Chopped parsley for serving
Directions:
Heat oil and butter in a large skillet over medium high heat. Add potatoes, onion and bell peppers. Cover and let cook for 4-5 min, stirring occasionally. Mix all spices together. Add spices to potato mixture and stir. Add more olive oil if needed. Let cook for 6-8 more minutes, stirring occasionally until the potatoes are tender and slightly browned. Add fresh parsley, stir and serve!
