Slow Cooker BBQ Pulled Chicken

My FAVORITE way to utilize my slow cooker is to prep proteins to be used in multiple different recipes. This is one of those recipes that can be a game changer for all my meal preppers out there! This is also a great option if you’re looking to stock your freezer with make ahead meals. This chicken can be used on top of bbq chicken salads, in bbq chicken quesadillas or wraps, or even on top of homemade bbq chicken pizza! *NOTE I doubled the recipe in this video which is why the measurements may look off. Recipe below is for 4-6 servings.

Ingredients:

3 lbs chicken breasts

1 yellow onion, sliced

1.5 C chicken broth

1 C @hoffandpepper BBQ sauce, sub your fave bbq sauce

1-2 C reserved cooking liquid

Directions:

Add sliced onion to the bottom of your slow cooker. Place all chicken breasts on top of onions, and add chicken broth. Sprinkle salt on top. Cover and cook for 4 hours on high or 6-8 hours on low. Once finished cooking, reserve 1-2 cups of the cooking liquid. Drain remaining liquid (keep this as homemade chicken broth!) and place chicken in a large bowl. Shred with 2 forks, or use a standing or hand mixer to speed up the process. Once shredded, add bbq sauce and stir until the shredded chicken is evenly coated. Add the reserved cooking liquid as needed to thin out the sauce. Serve immediately or freeze for up to 4 months.
