Slow Cooker BBQ Pulled Pork


Some of my favorite recipes are the ones where you throw everything in the crock pot, and then magically at dinnertime, you have a delicious, hot meal with no effort at all. Now, I don't have kids, but I do remember my mom using our crock pot AT LEAST 2-3x a week for dinners because it took so much off of her plate during the day! Chasing 4 kids around is enough work as it is, so having some easy, slow cooker meals in her back pocket was such a life saver for our family. Enter - SLOW COOKER PULLED PORK. This recipe is so easy that I debated even posting it...because in my head I was thinking, does this even count as a recipe?! But, I made this the other night and it was so tasty that I knew I had to share it. With only 4 ingredients, you'll find yourself making this all the time for your family. It is also a GREAT recipe for a crowd because it is low maintenance, and makes a lot of food with only a few ingredients. Definitely a crowd pleaser too! Be prepared for everyone to ask for the recipe before they leave :)

Ingredients:

2-3 lbs pork tenderloin

1 yellow onion, roughly chopped

1 (18oz) bottle of Sweet Baby Ray’s Original BBQ Sauce (or your favorite BBQ Sauce!)

1 C vegetable broth (optional)

Additional Supplies:

Slow cooker

Colander

Directions:

  • Roughly chop your onion into ½ - 1 inch chunks. Place in the bottom of your slow cooker.

  • Slice your tenderloin into 2-3 inch thick rounds. Place into your slow cooker on top of the onions.

  • Pour in 1 C vegetable broth OR water.

  • Cover and cook for 6 hours on low heat.

  • After 6 hours is up, remove your pork from the slow cooker. Reserve ½ C of the liquid left in the slow cooker. Place your colander in the sink and pour the remaining contents of the crock pot into the colander to strain out the rest of the liquid. Place the strained onions, etc left in the colander back into the crock pot.

  • Using two forks, shred the pork until there are no large pieces left. Return the shredded pork to the slow cooker with the ½ C of reserved cooking liquid. Add the BBQ sauce and stir until all of the pork is coated. Serve immediately or keep warm in the slow cooker until ready to serve.

NOTE: My favorite ways to serve this BBQ Pulled Pork is on Sweet Hawaiian Rolls as sliders, in BBQ Pork Quesadillas or on top of a salad - just as you would use BBQ chicken!
