Shoyu chicken - easily my one of the top 5 favorite meals from my childhood. If you are looking for new easy crockpot recipes, this one is for you! My dad learned this recipe from my Grandma Tu'ua (who I get my middle name from!), who then taught it to my mom after my parents were married, and it quickly established itself as a staple in our house for easy dinners. It's as simple as throwing the ingredients into your slow cooker, setting the timer and eating - doesn't get much better! This slow cooker chicken is the perfect accompaniment to teriyaki bowls, or simply served over a bed of rice (like we always did!). Now, I did make some adjustments to the original recipe, because the portions allowed for a crowd of 10-15 people! But this recipe is tried and true and will have you and your family hooked the first time you make it. I prefer to cook this recipe in a slow cooker, but I have also included directions for cooking this in an oven below! Also - when serving, make sure to take a huge spoonful of the delicious sauce from the crock pot and spoon it over the chicken and rice...It'll blow your mind! Ingredients:
2 lbs boneless, skinless chicken thighs or breasts
¾ C soy sauce
¼ C water
¼ C granulated white sugar
3 cloves garlic, minced
1 tsp fresh ginger (or 1 tsp dried ginger)
NOTE: I like to serve my shoyu chicken with white or brown rice and veggies (broccoli, carrots, etc.) Anything that tastes good on a teriyaki bowl will taste good with this chicken!
Additional Supplies:
Slow Cooker or oven-safe baking dish with a lid (you can also cover the baking dish with foil if you have it)
Slow Cooker Directions (my preferred method!):
Place chicken into your slow cooker.
In a separate bowl, combine remaining ingredients. Whisk together until the sugar is dissolved. (It’s ok if the sugar does not dissolve all the way into the liquid)
Pour sauce into the slow cooker. Using tongs, stir chicken so it is coated in the sauce. Place the lid on, and cook on low for 6-8 hours.
NOTE: 1 hour before serving, open your slow cooker and shred the chicken with 2 forks. (The meat should shred very easily!) Stir so that the shredded chicken is immersed in the sauce, then continue cooking for 1 hour.
Serve over a bed of rice and/or veggies!
