RIBS. I've always been intimidated by cooking them because I thought you needed a big BBQ or an expensive smoker to make delicious, fall off the bone, BBQ sauce covered ribs. BUT, lo and behold! I learned a new way to cook them right in my own oven. And let me tell you...They're incredible. These BBQ pork ribs are tender, saucy and sticky in all the best ways, and could not be easier to make. I promise! My roommate and I made these ribs last night, and I couldn't wait another minute to post them. Summer is right around the corner, and after making these oven roasted baby back ribs, you won't be missing your grill one bit!
Ingredients:
1 full rack of pork baby back ribs
12 oz of light beer (sub vegetable broth or ginger ale)
1 tbsp salt
¼ tbsp pepper
½ tbsp garlic powder
1½ C of your favorite BBQ sauce (I like Sweet Baby Ray’s Original BBQ Sauce)
Additional Supplies:
Baking dish (at least 2-3 inches deep)
Aluminum foil
Basting brush
Directions:
Preheat the oven to 325 deg (F).
Using a knife, score the underside of your ribs. Make shallow (around ⅛ inch deep), diagonal cuts across the ribs, then rotate the ribs 90 degrees and score it again (once completed, it should look like a checkerboard).
Season both sides of your ribs with salt, pepper and garlic powder. Use your fingers to rub the seasoning into the meat.
Place the ribs into a baking dish.
NOTE: You may need to cut the rack in half so that it can fit in the pan while still lying flat.
Pour the beer into the bottom of the baking dish. Cover the baking dish with foil and place in the oven. Bake for 1 hour and 15 minutes.
After 1 hour and 15 minutes, remove the ribs from the oven and remove aluminum foil. The ribs should be fork tender and almost falling off the bone. Remove ribs from the baking dish, drain the liquid, then return the ribs to the baking dish.
Using your basting brush, coat both sides of the ribs generously with BBQ sauce. Turn on the broil feature on your oven and set it to high. Once the ribs are coated in sauce, return to the oven and broil for 6-8 minutes until the sauce starts to caramelize.
NOTE: If you don’t have a basting brush, you can use a spoon to coat the ribs.
Remove ribs from the oven and serve!

Total Time: 1 hour and 35 minutes
