Ingredients:
1 tortilla
1 carrot, shredded or cut into thin matchsticks
⅓ cucumber, cut into thin matchsticks
½ hummus container
4 slices of turkey
Directions:
Peel the carrot. Using a cheese grater, grate the carrot until it is down to the stem. Throw away the stem. Set aside. (Or cut into thin matchsticks using a sharp knife)
Slice your cucumber in half lengthwise. Place cut side down and make thin (¼ inch thick) slices. Set aside.
Place your tortilla on a plate. Microwave for 15-20 seconds until softened. Using a butter knife, spread the hummus on the surface of the tortilla. Make a layer of sliced turkey on top of the hummus, then place sliced cucumber and shredded carrots on top of the turkey. Roll the tortilla like a burrito, slice in half and serve!
