The other day on my Instagram feed, I asked you all what kinds of recipes you would like to see and to my surprise, I got a lot of requests for vegan dishes! I have a few more in the works, but I thought I'd start out with these delicious Vegan Banana Nut Muffins! I am sitting here eating one for breakfast as I type this and let me tell you, they are DELISH! Even if you don't follow a vegan diet, you will absolutely love these. A little sweet from the bananas, crunchy from the walnuts, and dotted with ooey gooey chocolate. YUM! I also gave the option to sneak a little bit of protein powder into the recipe if you so choose. Make these banana nut muffin recipe for breakfast tomorrow and you'll be so glad you did!
Ingredients:
1½ C old fashioned oats
2 ripe bananas, mashed
1 tsp vanilla extract
¾ C almond milk
¼ C coconut oil, melted and cooled
1 Tbsp baking powder
⅓ C chopped walnuts
½ tsp cinnamon
¼ tsp nutmeg
¼ C brown sugar
¼ C plant based protein powder of your choice (optional)
½ C dairy free chocolate chips (optional)
Additional Supplies:
Muffin pan
Cupcake pan liners
Directions:
Preheat the oven to 350 deg (F). Grease your 12 cup muffin pan OR place the cupcake liners into each cup.
In a large bowl, mash your bananas. Stir in vanilla, cooled coconut oil, almond milk, cinnamon and nutmeg until well combined.
Add remaining ingredients and stir.
Evenly distribute the batter into all 12 muffin cups (they should be about ¾ of the way full - do not overfill!)
Place in the oven and bake for 20-22 min until golden brown on top.
