Have you ever tried the Wine Country Chicken Salad from Trader Joe's? It’s my absolute FAVORITE and I can’t believe it took me this long to create a remake at home! This chicken salad is great with crackers, in lettuce cups, on a sandwich or in a wrap! It’s so versatile and soooo yummy. It is also a great option for a quick meal prepped lunch!

Ingredients (4 servings):
2 large chicken breasts, cooked
1 C Mayo
4–5 stalks celery, diced
1/2 C dried cranberries
1 C halved pecans (unsalted), roughly chopped
2 Tbsp white vinegar
1 Tbsp honey
1/4 tsp salt + more to taste
Sprinkle of pepper
1 Tbsp grainy Dijon mustard

Directions:
Cook chicken breasts (I boiled mine in salted water for 20 min and let cool). Dice cooked chicken breast into 1/2 inch cubes. In a large bowl, whisk together Mayo, vinegar, salt, pepper, honey and Dijon mustard. Add diced chicken, celery, cranberries and pecans. Add more salt and pepper to taste. Serve!
